Which one restores more of the environment?

Both go well beyond data backup. Cloud Rewind covers compute, storage, networking, databases and security on AWS, Azure and Google Cloud, and captures the data with the configuration. Firefly documents 190 AWS and 86 Azure resource types, itemizes IAM and DNS, and does not back up data contents. On infrastructure coverage alone they are close (86 and 84); add the data and Cloud Rewind restores more of a working application in one product.
